It is So Hot Here In The Carolinas



Hello dear friends. I was wondering what everyone was having for dinner today. It is about 100 degrees here in the Carolinas and it is going to be hotter tomorrow so I am working on finding some more recipes that require little effect to cook and some cold meals. I have used every last one I know about so for laugh.gif . But tonight we are grilling some Salmon on the grill with some garlic and lemons, and with that we are having a salad. It is just to hot to cook on the stove and if I do I do it early in the mornings. Last night at about 10pm I baked some muffins and granola for breakfast to place in the freezer for the next week so that I will not have to fix breakfast because it is starting to get hot here by 8 am and it can be miserable. Our central cooling unit is working over time to cool the house but this heat wave is horrible. So can everyone that stops by today please leave me a comment (I don't usually ask anyone to leave a comment unless they feel like it but today I really need some inputlaugh.gif) telling me somethings that you all cook for when it is hot out......

I don't do cold meals, so I don't have any ideas for you. It's hot here, too. We've been in the 100s as well, and a few days ago, we peaked at 108.

Here I am thinking it is so hot here at 69 haha. All I can think of is down some ice cream after dinner to cool off! :)

I feel your pain, DeNiece! It's hot here too!
Other than different types of salads, I can't think of many cold meals. What I try to do on these really hot summer days is keep the oven off, and make skillet meals or use the crock pot.
I'm making spaghetti tonight, and will probably have a salad on the side.

It's over 100 today ~ phew!
I try to cook like the people in India... something fast that uses an intense, quick heat. Anything with a stir fry meat, grilled chicken strips, or browned ground beef for tacos or salad.
Also, cooking after the sun goes down and then reheating it in the microwave for dinner the next day is a good option.
How about finger foods? Anything chopped up with a bit of dip or put on a cracker is somehow refreshing.

Good luck staying cool! I'm in NC and dealing with the triple digit heat as well. Tonight, I'm making whole wheat pasta with leeks (locally grown from farmers market), Parmesan and whatever other vegetables I have on hand. Not a cold meal, but its quick to put together.

A meal that our family enjoys in the heat is cold spaghetti.

I make pasta late at night or early in the morning while still cool. Store in the fridg in a baggie with a bit of water.

You need enought fresh tomatoes to feed your family. My family of 9 can eat about 15 romas...fresh on the vine.
I chop and squish them with olive oil, salt, pepper, fresh garlic and fresh basil.
Let this sit on the counter (covered) for 1 or more hours. The flavors blend.
For dinner, toss tomatoes with drained pasta. Serve with a tossed green salad and bread with butter (from the store on a hot day)
Sweet tea, lemonade, water or iced coffee.
Fresh fruit over pound cake for dessert.

It might be too late for this post, but summer isn't over yet! Not only is it uncomfortable while you're cooking, sometimes your tummy just can't stomach a huge hot meal after a hot day.

As others have said, Salads (Steak, chicken, taco, etc) or add some ham and frozen peas to classic macaroni salad, or Italian pasta salds with meat and cheese, veggies, pasta, and italian dressing. Yum! (You basically can do anything you want with that type of food. Use what you have on hand) Tacos don't heat up the kitchen and have lots of fresh veggies to keep cool. Subs/hoagies/grinders (whatever you call them in your area!): Think Subway-- meats or Tuna salad and cheese with veggies on wheat buns make a very satifying dinner. You can make quesedillas super quick in the mircowave...
Or, you can always use the grill!

If you do cook, cook some extra meat to use in another meal (like chicken...make an extra couple pieces, chop them and throw them in the fridge for another day that you won't have to heat up the kitchen.

Desserts--watermelon and other fruits, jello, ice cream...lots of options.

We do alot of crock pot dinners. It doesn't heat up the house much or you can plug it in out in your garage our outside.
We use alot of recipes from Stehanie O'Dea. She has 2 cookbooks all in the crock pot but she also has most of these recipes on her website crockpot365.blogspot.com

I utilize my crockpot on hot days. Then, there is no heat in the house from the stove/oven & you can throw it in that morning. Also, I make a lot of pasta salads during the summer-you can use whole grain pasta, so it is not as many carbs and fills you up sooner. You can mix in cold meats and veggies for balance. I use Newmans Own family recipe italian dressing for the dressing, cube up a brick of mild cheese, some leftover cold cuts and pop in some basic vegetables. Easy and done. Also, pasta doesn't cook too long on the stove & this can be made in the morning-just add the dressing before serving.
