This morning I have fried eggs cooking
Here is some pictures of the finished eggs and muffins ready for breakfast
Here is my oldest son looking like hey mom can you hurry up and take the picture I sure am hungry lol
I also made a batch of muffins called Morning Glory muffins which we through were the best muffins we have had...They were OH so Good....I got the recipe from the book I was reading by Thomas Kinkade and Katherine Spencer called The Inn at Angel Island and it was a wonderful book that just inspirated me... One of my favorite quotes from the book was when Liza was feeling down about a decision she had to make very soon and she was up in her room and found a flower pot on her window ceil that she never really notice that was painted by her decreased aunt Elizabeth and on that flower pot was the saying " And we know that all things work together for good to them that love God" It is a Bible verse in Romans 8:28 that I love to read..... But here is the recipe if you would like to try it and if you do please let me know I would love to hear what you through of these wonderful muffins.
Morning Glory Muffins
The ingredients and spices varied and there is no reason to worry if you don't have everything on hand, just improvise because the muffins never come out the same way twice but are always delicious and can be called vanishing muffins since they disappear so quickly (Quote from the recipe by the author)
Ingredients
2 1/4 cups unbleached all- purpose flour
2 teaspoons baking soda
3/4 cup brown sugar, lightly packed (light or dark is fine)
3/4 cup white sugar
2 tablespoons cinnamon
1 tsp ground ginger
1/2 tsp allspice
2 cups grated carrots
1 cup crushed pineapple, packed in juice and DRAINED
3/4 cup raisins (golden ones preferred)
1/2 cup shredded coconut
1/2 cup walnuts or pecans
3 large eggs
1 tsp vanilla
1 cup canola oil
Directions:
Preheat oven to 350 F. Line 15-16 muffin tin places
In large bowl mix flour, baking soda, sugar, cinnamon, ginger, allspice. Add carrots, pineapple, raisins, coconut, nuts and mix thoroughly.
In separate bowl, whisk eggs with vanilla and then add oil. Pour egg mixture into dry ingredients in THIRDS and blend well. (Do not over mix or muffins can turn out tough). Fill muffins to brim. Bake 25-35 minutes (watching carefully--mine took 25) or UNTIL toothpick or sharp thin knife in middle of muffin comes out clear. Cool 10-15 minutes and remove from tins.

Glad to hear that you guys had fun at the Fireworks. We didn't make it down to the park for ours this year (on July 1st, Canada Day).
