I make yogurt homemade too. I have found a great and easy way. I'll just share it with you here and if you'd like you can give it a try.
I only do 2 quarts at a time (half a gallon) and I use whole milk.
I wash two 2 quart canning jars with hot water. I check the lids to make sure they are clean as well. I use on jar to measure my milk into a pot. I scald the milk t 180* (just before the boil) stiring every few minutes. Once it reaches 180*, take it off the heat and cool to 115*. This is the temp you can add the start. I use 4 Tbl. of plain yogurt PER quart. (you can use yogurt from the store or from the last batch) Stir it in very well and pour into your canning jars. Make sure you rinse jar that had the milk in it before.
I then take my 2 jars filled with fresh yogurt and 1 quart jar filled with very hot tap water and place into a cooler. My cooler is small so I only need 1 jar of water. If you use a bigger cooler you may want to use more. The goal is to keep it at about 90-110* for 8 hours. Don't move your jars or it will separate and change the hot water at the 4 hour mark.
The first batch I did didn't work. I moved it to much.
The second batch was a bit to hot. From the third batch on they have turned out perfect everytime.
(If you want to add sugar and vanilla, you add it at the heat it to 180* point. 3 Tbl sugar and 1 Tbl vanilla PER quart.)If you have questions just let me know!
